restaurant n° 7 is on the ground floor of a building that communicates with riad n°9, an 18th century traditional medina home that is run as an intimate “boutique guesthouse” by owner stephen di renza.
the property underwent 3 years of restoration and for the most part needed to be entirely re-built.
the ethos behind the restoration and decoration was to use traditional local craftspeople and materials but not to copy or “fake” a historical property.
the space has intentionally been sparsely embellished with traditional tiling that is exclusively black and white and decorated with limited, large-scale photography.
the intention was to create a space in contrast with the hyper-activity just outside the door yet allow guests to experience the sense of place that is the ancient, medieval medina of fez.
the result is bright, airy, echoes traditional local architecture and craft yet feels comfortably contemporary.
